This weekend we went camping and had a grand ole time. I can't wait to go again. The first picture I put up for this blueberry cobbler post, is actually an example of what you shouldn't do with a dutch oven. That is: cook in the fire. Luckily most of the pot wasn't in the fire, but the food on the side that was, became a little scorched. Lesson learned. Nevertheless, my dad said this was the best camping cobbler he ever had, and because he's such a mountain man, I took that as a compliment. Maybe he was just trying to boost my self esteem, but I'll take all the praise I can get. Andy said it's hard to mess up white cake mix and pie filling. He's probably right.
Anyways, if you haven't noticed from my blog already, I try not to feed my family completely processed meals on a regular basis. I think what we put in our bodies is important, so it should mostly be fresh. But, sometimes, I just don't care, and camping is one of those times. So, here are the not-so-healthy ingredients:
Dutch Oven Blueberry Cobbler

1 box white cake mix
2 cans blueberry pie filling
12-16oz. Sprite (I didn't measure, I just eyeballed. 12oz. is about 1-1/2 cups though.)
Pour pie filling in a 6 quart dutch oven.
In a separate bowl, mix Sprite with cake mix. Don't worry if it's a little lumpy. Poor into dutch oven, covering the pie filling. At this point I was a little worried, because I thought I should've brought another box of cake mix. I know, this looks like crap...I was using too big of a dutch oven, so that was part of the problem. It rose a lot though, so don't worry if you think you're going to be eating mostly pie filling, because it won't be that way in the end.
Make a ring of 10 coals. Place dutch oven on top. Put 20 coals on top of the dutch oven and cook until cake is golden color. (Don't put it in the fire, like I did here. Like I said before, one side was a little scorched.)
Despite not following the rules, my results were pretty fabulous. SERVE HOT and enjoy!

Sherry: It's funny to me you asked about that. Andy swears by his head light. It makes me laugh that he wears it. I guess it's only for the hardcore camper.;)
when i bought my house throught costa rica homes for sale i wanted a great kitchen with a big space to put a big oven. Now i can baking every kind of cakes in there.
