There are few desserts that taste better to me than chocolate covered strawberries. It's no coincidence that sometimes the simplest foods are the most fulfilling. I've seen many recipes for this celestial treat, and I've learned 3 things making it:
1. Use high-quality semi-sweet chocolate. Ghirardelli is a good brand. Don't use milk chocolate! Semi-sweet contrasts the sweetness of the strawberries much better, I promise.
2. Bring your dried, washed strawberries to room temperature before dipping. They can get mushy otherwise.
3. Don't add shortening, butter, milk, corn syrup or anything else to the chocolate. Many highly rated recipes on the web call for other ingredients besides chocolate. Why mess with an already good thing? Seriously, there's no need. Leave this recipe in it's purest form.
Go to town! Anyone can makes these. They require no skill whatsoever.
Chocolate Covered Strawberries
2 pints room temperature strawberries
2 cups high-quality semi-sweet chocolate chips
wax paper
Put chocolate chips in a microwave safe bowl. (You can also use a double-boiler for this, but the microwave is fast and easy.) Microwave on high for 30 seconds. Stir. Microwave for another 30 seconds. Stir again. If the mixture is glossy and not clumpy, you are ready for dipping. Holding berries by the stem, dip each one in chocolate, about three-quarters of the way to the stem. Place, stem side down, on wax paper and chill in refrigerator until hardened. Enjoy!

Even though I adore to eat them, I have never made them at home; thought it was too much trouble. I was wrong! Yours look lovely!
I wish Costco still had their big, yummy strawberries! This is making my mouth water!
