Weekly Dinner Plan 5/24/10



Woops...my weekly dinner plan is a day late.  But, better late than never right?  I don't even know if posting my dinner plan helps people.  I use it to refer to when I make dinner during the week, but it's not usually a post I get comments on.  Let me know if it's beneficial to you, and I'll keep doing it.

Monday- Peanut Beef Stir Fry - I think I mentioned before that making stir fry is one of my sneaky ways to get my husband to eat vegetables.  I'm always out for a new recipe and I still have beef, so I thought I'd try this.

Tuesday- BBQ Shrimp and Chicken with Corn- I didn't end up making this last week because of our camping trip, so I thought I'd make it this week.  Corn doesn't really go with shrimp, but I have to get rid of it!

Wednesday- Chicken Tortilla Soup- I never go wrong with this recipe.  I have left over corn tortillas from my taquitos last week, so I'll use them in this.

Thursday- Mark Bittman's Real Beef Stroganoff recipe.  Beef Stroganoff doesn't usually sound good to me.  It sounds even worse if it involves cream of something soup.  I'm excited to try Bittman's "real" version though. I trust him enough, to think that this might be good.

Friday- Dutch Oven Chicken and Potatoes - This weekend's camping trip gave me the urge to try some more dutch oven recipes.  Dutch oven chicken and potatoes always tastes good to me.  We're not camping, but that doesn't mean I can't still use the dutch oven.

Saturday- Free Day

Sunday- Chicken Enchiladas with Salsa Verde - I usually use a recipe that requires making your own sauce, but my parents have a ton of green sauce in their cupboards, so I thought I'd make this one.

I like your dinner plan days--keep doing them! And I think shrimp and corn go great together--reminds me of a clam bake.
