Thursday: Turkey Burgers with Sweet Potato Fries (I froze 3 burger patties leftover from last week.) Costco now sells Sweet Potato Fries and I think they taste great.
Friday: Chicken Tenders with Greek Ladolemono sauce, Brown Steamed Rice (with chicken bouillon,) and steamed broccoli
Saturday: Free Day
Sunday: Chicken-Mushroom-Spinach Quesadillas

Weekly Dinner Plan 9/19/10
This week I finally tried the Turkey-Sausage and Gnocchi Soup and wasn't disappointed. I'm a huge fan of turkey sausage in soups and fell in love with Gnocchi when I lived in Uruguay. Gnocchi are dumplings made of semolina, ordinary wheat flour, or potatoes. I've only had them made with potato, but semolina sounds good too. Generally, I think 5 ingredient recipes taste like they're missing ingredients, but I think this recipe is actually good enough to eat "as is." This soup + salad + crusty bread = bliss. The Gnocchi really lends a creaminess that I haven't tasted in other similar soups made with tortellini or potatoes. Anyways, I can't wait to take the leftovers to work this week.
Last week I didn't make a lot of recipes on my schedule. The lasagna I made seemed to be never ending so we had the leftovers for lunch a few days. We also went to the Utah State Fair one night as evidenced by the above pictures. Jackson had fun petting the animals and I ate a foot long corn dog. I think that's something you should only try once. Here's this week's itinerary:
Monday: Seasoned Turkey Burgers and Corn on the Cobb
Tuesday: White Bean and Bacon Soup with Breadsticks
Wednesday: Spaghetti and Meatballs with Green Salad- "Williams and Sonoma Kid's Cookbook"
Thursday: Chicken, Pesto, and Tomato Pizza
Friday: Lighter General Tso's Chicken
Saturday: Free Day
Sunday: Fast Chicken Fajitas
Oh one more thing...I'm going to try to eat one dessert a week. This week, I'm going to dream about eating these.

Weekly Dinner Plan 9/12/10
This week I got fresh produce and fruit from Bountiful Baskets. It's a neighborhood co-op thing that I've decided I'm in love with. As far as veggies go this week, I had to find a way to use cabbage, corn, and romaine lettuce. Not too hard. I love that every week we'll get different stuff to incorporate into our menu. I won't my family to enjoy a varied diet...Gotta get those phyto-chemicals.;)

Tuesday- Chinese Cabbage Salad
Wednesday- Lasagna with Green Salad- "Fun Food" Williams and Sonoma Kid's Cookbook (It's like 5 bucks on Amazon.)
Thursday-Seasoned Turkey Burgers and Corn on the Cob
Friday- White Bean and Bacon Soup and breadsticks
Saturday-Chicken Pesto Tomato Pizza- Didn't end up eating this last week either.
