Another non-revolutionary but simple recipe here. I've seen this recipe in the Pioneer Woman Cooks Cookbook, Paula Deen's My First Cookbook, and Tiana's Cookbook, so no one gets credit. This is a great recipe for kids to make, but sometimes I take one of these out the door with me on the way to work, because it's so quick and easy. Here's the recipe:
Egg in a Heart
- 1/2 T. butter
- 1 slice 100% whole wheat bread
- 1 egg
- kosher salt and pepper to taste
Directions: Cut a hole in the center of bread with heart cookie cutter. Put a pat of butter in the skillet and let it melt over low heat. Put the piece of bread on top of melted butter. Tap the egg gently on the side of the counter and then pull the sides apart with your fingers, breaking it right over the hole in the bread.
Let the egg cook until the bread is golden, about two minutes. Turn the bread over with a spatula, egg and all. Don't put as much butter in the pan as I did here, unless you're planning on clogging your arteries. Cook until the egg and bread look done, about another 2-3 minutes.
Sprinkle with some kosher salt and freshly ground pepper and enjoy!
